Smaller chocolate processors such as confectioners and pastry cooks, but also confectionery factories, ice cream and biscuit producers do not normally produce their own chocolate from beans, but purchase it from chocolate factories and from companies specialising in semi finished chocolate, like Felchlin which is Hermann Hofmann's choice as the best Swiss couverture producer today, so that they can then use it to produce their own specialities.

This kind of chocolate, which is delivered in large blocks, buttons or in liquid form in tanks, is know as couverture, and also comes in many different types for making a wide variety of specialities. Couverture contains a slightly higher proportion of cocoa butter, to make it easier to handle in liquid form. The specialities produced by pastry cooks and confectioners with great professional knowledge and pride, are now also possible by SELECTION HERMANN HOFMANN making it available for outstanding home baking and desserts as well.

Swiss Couverture Buttons DARK 52 %. Ingredients: Sugar, Cocoa Mass, Cocoa Butter, Whey Powder (milk product), Antioxidant (E322 ({soybeans - soybeans products)}, vanilla. May contain traces of peanuts, tree nuts & nut products.

Swiss Couverture Buttons WHITE 33 %. Ingredients: Sugar, Cocoa Butter, Milk Powder, Antioxidant {E322 (soybeans -soybeans product)}, vanilla.

Melting: Double Boiling (Recommend) - double boil couverture buttons with hot water under 50'C. Keep water or moister away from the chocolate. Stir the chocolate constantly until it completely melts. Shaping: Cool the chocolate immediately at around 10'C. Chocolate will set in around 20 minutes.

Remarks: If temperature fluctuates while storing buttons, bloom ( a grey-white film) may appear on the chocolate, however such blooming does not affect the quality nor taste of the chocolate. Store couverture in a cool and dry place at a temperature of 15’ C to 20’ C
